I would say yes. You are used to seeing what you are going to eat so you eat with your eyes and envision the taste. When the vision is lost you have to rely on the smell, textures, and taste of the food items and how they go together.

You can say they have gotten and upgrade.
How do you know when the food is done?
By smelling, listening, and tasting.
Is it harder to now to cook than before you lost your sight?
Yes, it still takes me some time to get the recipes right and the method of cooking but organization is the key.
