This flavorful chicken sandwich was good and you can taste all the aspects of the sandwich. Don’t be fooled by the dairy-free cheese a lot have the same quality taste as their dairy counterparts.

Ingredients

  • 2 Tbsp Freshly squeezed lemon

  • 2 Tbsp Honey

  • 4 oz Chilled herbed chicken (sliced on a bias 1/8″)

  • 1 ea French baguette (slice in half)

  • 3 oz Chilled sliced sautéed baby red bliss or yellow potato

  • 1 oz Baby spinach (whole leaves)

  • 2 oz Dairy-Free Feta cheese (sliced 1/8″) or crumbled

  • 2 tbsp Spicy herb pesto

  • TT Pepper

Directions

  • Mix the lemon juice and honey in a bowl then add the chicken and set aside.
  • Toast the baguette and build the sandwich.
  • Spread the spicy pesto or parsley spread on the bottom of the baguette.
  • Layer the sandwich as follows: sliced chicken, sliced potatoes, baby spinach, feta cheese and sprinkle the pepper on top.
  • Close the sandwich, use picks to separate it into three sections, and slice the sandwich into three parts. Enjoy with your favorite drink and chips or a side salad.

Notes

  • All ingredients are dairy-free and can be substituted for regular milk-based products.
  • Spicy Herb spread will follow.
  • This is a cold sandwich make sure you cook the chicken to 165 degrees and also cook the potatoes until soft and chill both of them. You can also use leftover chicken as well.
