kcalThe cucumber sauce is adaptable and has many uses.
Ingredients
2 8 oz dairy free greek yogurt or sour cream
2 ea cucumbers seeded and diced
2 tbsp olive oil
1/2 lemon juiced
1 tbsp fresh dill (could use dry dill instead of fresh)
3 tsp minced garlic
TT salt and pepper (to taste)
Directions
- Combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill, and garlic in a food processor or blender.
- Process until well combined. Transfer to a bowl, cover, and refrigerate for at least one hour for the best flavor.
Notes
- When you use dry herbs vs fresh the dried herbs have a stronger flavor so cut the amount that the recipe mentions.
- You can use regular dairy items in this recipe.
- If you don’t like cucumbers you can omit them.
