The cucumber sauce is adaptable and has many uses.

Ingredients

  • 2 8 oz dairy free greek yogurt or sour cream

  • 2 ea cucumbers seeded and diced

  • 2 tbsp olive oil

  • 1/2 lemon juiced

  • 1 tbsp fresh dill (could use dry dill instead of fresh)

  • 3 tsp minced garlic

  • TT salt and pepper (to taste)

Directions

  • Combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill, and garlic in a food processor or blender.
  • Process until well combined. Transfer to a bowl, cover, and refrigerate for at least one hour for the best flavor.

Notes

  • When you use dry herbs vs fresh the dried herbs have a stronger flavor so cut the amount that the recipe mentions.
  • You can use regular dairy items in this recipe.
  • If you don’t like cucumbers you can omit them.
