Ingredients
1 oz Olive oil
1 cup Mushrooms (for chicken button and for seafood sliced baby bella)
1 tsp Minced garlic
1/3 cup Diced tomatoes
2 tsp Blacking seasoning or Jamaican jerk seasoning
1 1/2 oz Alfredo sauce (vegan**)
3 oz Heavy cream
1 1/2 oz Parmesan cheese or Asiago cheese shredded
6 oz Pappardelle or fettuccine pasta
2 tsp Parmesan cheese shaved
2 1/3 cups of diced chicken breast or diced cooked lobster and shrimp (you can leave the shrimp whole and the lobster meat whole)
Directions
- Boil salted water. Cook pasta until nearly al dente, then rinse under cold water to cool and set aside.
- In a hot sauté pan, add oil and diced meat. Sauté for 1-3 minutes.
- Add mushrooms and garlic, and sauté for 3 minutes.
- Add heavy cream, Alfredo sauce, spices, and cheese. Cook for 2 minutes.
- Add tomatoes and pasta. Stir and cook until heated through, 1-2 minutes.
- Plate in a pasta bowl, garnish with shaved vegan Parmesan cheese.
Notes
- The lobster and shrimp can be diced and some can be left whole for garnish.
- When adding the seafood it will be 1/3 cup of diced lobster and 1/3 cup of diced shrimp.
- If sauce is to thick you thin out the sauce with chicken stock or water.
