This mother sauce can be used as a base to make other white sauces, such as Alfredo.

Ingredients

  • 1/3 cup butter

  • 3 tbsp greated onion

  • 3 tbsp flour

  • 1 1/2 cup chicken or vegetable broth

  • 1 1/2 cup half and half

  • 3/4 tsp salt

  • 1/2 tsp ground white pepper

  • 1 1/2 pinches of thyme

  • 1 1/2 pinches cayenne pepper

Directions

  • In a small saucepan, melt butter and stir in the flour, salt and white pepper.
  • Add cold half-and-half and cold chicken broth all at once. Stir well. Cook, stirring frequently, at medium heat until thick
  • Remove from heat and stir in seasonings.
