Ingredients
1/2 cup roma tomatoes finely diced (seeded)
1 ea small red onion or shallot finely diced
1 each small sweet pepper (red, orange, yellow) finely diced
3 tbsp light olive or vegetable oil
3 each lime juiced (for fresh lime juice)
1 each lime grated for lime zest
1 1/2 tsp salt
1 1/2 tbsp cilantro
1 lb diced shrimp, fish or crab (lump or jumbo lump)
2 each red thai chili pepper or jalapeno finely diced
Directions
- Mix all the ingredients; except the cilantro.
- Add the seafood to the mixture and place it in the refrigerator to marinate for at least an hour.
- When ready to serve add the cilantro, mix and serve.
Notes
- When mixing the crab be gentle not to break the meat too much.
