These spicy wings are sure to please any crowd and can be paired with your favorite sauce to cool the heat.

Ingredients

  • For Sauce

  • 2 Cups Whiskey or Brandy

  • 1 tbsp sriracha

  • 1/8 tsp red pepper flakes

  • 3/4 cups brown sugar

  • 1/8 tsp salt

  • 2 tbsp butter

  • For Wings

  • vegetable oil (if frying) and some to make paste (2 oz for paste optional)

  • 2 tbsp ground coriander

  • 2 tbsp ground ginger

  • 2 tbsp light brown sugar

  • 1 tbsp onion powder

  • 1 tbsp garlic powder

  • 1 tbsp kosher salt,

  • 1 each habanero, scotch bonnet, or red chili pepper (if you can find the powder or these peppers it will work better)

  • 2 tsp ground black pepper

  • 2 tsp dried thyme

  • 1 tsp ground cinnamon

  • 1 tsp ground allspice

  • 1 tsp ground cloves

  • 3 lb wings split at the joints and tips removed or (leave whole)

  • 1 tbsp chopped cilantro for garnish

Directions

  • Depending on which method of cooking you are using:
    1. Frying: preheat the oil to 350 degrees. Cook for 8 to 10 minutes (use only dry spices)
    2. Oven: preheat oven to 400 degrees. Cook for 35 to 40 minutes
    3. Air fryer: preheat the air fryer to 400 degrees. Cook for 20 to 30 min.
  • For wings paste
    Combine the coriander, ginger, sugar, onion and garlic powders, salt, habanero pepper, black pepper, thyme, cinnamon, allspice, cloves, and 1 tbsp of oil in a blender or food processor until a paste is formed. Season the wings with salt and pepper and toss them in the jerk paste. Let marinate for least an hour before cooking.
  • For the Glaze:
    Heat the whisky, sriracha, red pepper flakes, brown sugar, and salt in a medium saucepan. Bring to a boil over high heat and cook until reduced by half. Remove from the heat. and then add butter.
  • Cook wings until the proper temperature of 165. Once the appropriate temperature is achieved
    Add the whisky glaze and chopped cilantro and toss to coal each wing.
  • Wings can be paired with a Chimichurri Sauce.
