Ingredients
3 tbsp olive or vegetable oil
1 tbsp chili oil
1/2 tsp sesame oil
2 eggs scrambled
1 medium carrot julienne (matchstick)
1 small onion diced
1/2 cup thinly sliced pea pod
1/2 cup thinly sliced nappa cabbage (optional)
1/2 cup bean sprouts
1 tbsp of minced garlic
TT salt and pepper
2 cup cooked and chilled rice (basmati)
3 each green onions (scallions)
2 -3 tbsp soy sauce
1 tsp oyster sauce
Directions
- Heat a wok or pan on high heat until very hot. Add olive and chili oil, then sauté carrots, onion, pea pods, napa cabbage, and garlic with a generous pinch of salt and pepper for about 5 minutes or until the onion and carrots are soft.
- Immediately add the rice, green onions, soy sauce, and optional oyster sauce, stirring to combine. Sauté for 3 more minutes, occasionally stirring. Move the rice mixture to the side of the pan, scramble the eggs, then combine them with the rice. Cook until fully incorporated, remove from heat, and stir in the sesame oil.
- Serve immediately, or refrigerate for up to 3 days.
