Black-eyed pea salad is a refreshing and nutritious dish that is perfect for summer picnics, potlucks, or as a side dish to any meal. It’s typically made with fresh vegetables and a tangy dressing, making it both delicious and healthy.

Ingredients

  • 1 cans (15.5 ounce) cans black-eyed peas

  • 1 cup cherry tomato halved

  • 1 each medium red bell pepper diced

  • 1 each medium green bell pepper diced

  • 1 each small red onion, diced

  • 1 each stalks celery diced

  • 1 each cucumber diced

  • 1 each avocado (optional)

  • 1/4 cup chopped fresh parsley

  • TT salt and pepper

  • For Sauce

  • 1/4 cup olive oil

  • 3 tbsp apple cider vinegar or red wine vinegar

  • 1 tsp garlic minced

  • 1 tsp Dijon mustard

  • TT salt

  • TT black pepper

  • 1/4 tsp paprika (optional)

Directions

  • In a medium bowl, toss together black-eyed peas, tomato, red bell pepper, green bell pepper, red onion, celery, and parsley.
  • In a small bowl, mix balsamic vinegar and olive oil. Season with salt and pepper. Toss into the vegetables. Cover, and chill in the refrigerator for 1 hour to overnight.
