Bolognese sauce is a classic Italian meat-based sauce that originates from Bologna, Italy. It is typically made with ground beef or a combination of beef and pork, slow-cooked with onions, carrots, celery, and tomatoes. The sauce is often enriched with red wine, milk or cream, and seasoned with garlic, bay leaves, and sometimes a hint of nutmeg.
Bolognese is traditionally served with pasta, especially tagliatelle, but it can also be used in lasagna or other dishes. The sauce is known for its rich, hearty flavor and thick, meaty texture.

Ingredients

  • 1/3 cup olive oil

  • 11 slices bacon, cut into 1/2 inch pieces1

  • 1 each large onion, minced

  • 2 cloves garlic, minced

  • 2 lbs lean ground beef

  • 1 lb ground pork

  • 1 lb fresh mushrooms, sliced

  • 5 each carrots, shredded

  • 2 stalks celery, chopped

  • 2 cans (28 ounce) Italian plum tomatoes

  • 1/2 can of tomato paste  

  • 1 cup dry white wine

  • 1 cup chicken stock

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • TT salt and pepper

  • 2 lb pasta

Directions

  • In a large skillet, warm oil over medium heat and saute bacon, onion, and garlic until bacon is browned and crisp; set aside.
  • In a large saucepan, brown beef and pork. Drain off excess fat. In a saucepan, stir in bacon, mushrooms, carrots, celery, tomatoes, tomato sauce, tomato paste, wine, stock, basil, oregano, salt, and pepper. Cover, reduce heat, and simmer for one hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain
  • Serve sauce over hot pasta.

Notes

  • If the sauce is too thin use more tomato paste.
