Unseen Cuisine was started to give the blind, low vision, disabled, and people suffering from allergies, also everyone in between a chance to be better in the kitchen. With restaurant quality meals that you can prepare at home without the worry if the food being cross contaminated and putting your health at risk. We should all have a right to feel confident and relaxed when we go out to the restaurant for a meal. Now you can have the the same quality at home. Understanding that not everyone will be a celebrity chef but the recipes will bring a upgrade to your meals. Being blind and disabled brings a lot of challenges when it comes to cooking some times we are at the mercy of who ever is cooking our meals. Sometimes we like what they made or just want something different. These recipes, videos, food tips and health coaching advice can make a difference and make a person a little more confident in the kitchen. We exclusively use dairy-free products in our recipes. However, the dairy aspect of the recipes can be substituted with regular dairy items if desired.

Chef Riq Glispy
My journey with blindness has been a surprising one. I have been cooking professionally for 29 years as a holistic chef and I have a severe dairy allergy. Yes I know a Chef who is blind and can not have any kind of dairy. My certifications are IIN Health Coach, Fitness Nutrition Coach, Personal Chef, and Holistic Health Practitioner with AADP. After cooking in restaurants from casual to fine dining, being featured on the news for my artisan dairy – free cheese and owning my own business. I wanted to work in culinary medicine. So I enrolled in nursing school, I was two and half years in to my BSN program (which I took the accelerated three year path). I was blinded by an chemical accident at work in the kitchen. The chemical water splashed into my eyes and on my face. Unfortunately when this accident took place, I was on my last year of nursing school and was declared legally blind. It left me hurt, mad, unemployed and tossed out of a new career I worked so hard at. Waiting for help to come, knowing that I will never cook in a commercial kitchen again, work in hospitals helping to save lives, not being able to see or read was devastating and my life stopped.
I had to start learning how to do things for myself until I could get the help that I needed to live again. Its been a big adjusting winding road and I am at the beginning stages. However one thing I needed to do was eat, but not just eat, but rediscover food again with out my vision and rely on my other senses. Its been a struggle but I still needed to create and not go down the road of depression. I rely on my technology (kitchen gadgets) and the core principles of cooking that I learned in culinary school and taught in high school. I am no where perfect I still make a lot of mistakes but I do not give up. Now I am ready to share my experiences and the recipes I have acquired over the years with everyone. This way if you can not go to the restaurant to eat safe meals why not bring the restaurant home. This is part of my healing journey because if I can help elevate and help people live healthier lives through cooking and coaching sign me up.
