Black-eyed pea salad, often referred to as Black-Eyed Pea Salad or Cowboy Caviar, is a fresh and flavorful dish that combines black-eyed peas with a variety of vegetables and a tangy dressing.

Ingredients

  • 3.5 cans (15.5 ounce) cans black-eyed peas

  • 1 1/2 each large tomato, chopped

  • 1 1/2 each medium red bell pepper, chopped

  • 1 1/2 each medium green bell pepper, chopped

  • 1 each red onion, diced

  • 1 1/2 staks celery, chopped

  • 1 1/2 tbsp chopped fresh parsley

  • 1/3 cup champagne vinegar

  • 2 tbsp and 2 tsp olive oil

  • TT Salt and pepper

Directions

  • In a medium bowl, toss together black-eyed peas, tomato, red bell pepper, green bell pepper, red onion, celery, and parsley.
  • In a small bowl, mix balsamic vinegar and olive oil, and season with salt and pepper.
  • Toss dressing into the vegetables. Cover, and chill in the refrigerator for 8 hours, or overnight.
