This recipe can be vegan by omitting the meat and adding your favorite vegetables.

Ingredients

  • 1 oz Olive oil

  • 1 cup Mushrooms (for chicken button and for seafood sliced baby bella)

  • 1 tsp Minced garlic 

  • 1/3 cup Diced tomatoes 

  • 2 tsp Blacking seasoning or Jamaican jerk seasoning

  • 1 1/2 oz Alfredo sauce (vegan**)

  • 3 oz Heavy cream 

  • 1 1/2 oz Parmesan cheese or Asiago cheese shredded 

  • 6 oz Pappardelle or fettuccine pasta

  • 2 tsp Parmesan cheese shaved 

  • 2 1/3 cups of diced chicken breast or diced cooked lobster and shrimp (you can leave the shrimp whole and the lobster meat whole)

Directions

  • Boil salted water. Cook pasta until nearly al dente, then rinse under cold water to cool and set aside.
  • In a hot sauté pan, add oil and diced meat. Sauté for 1-3 minutes.
  • Add mushrooms and garlic, and sauté for 3 minutes.
  • Add heavy cream, Alfredo sauce, spices, and cheese. Cook for 2 minutes.
  • Add tomatoes and pasta. Stir and cook until heated through, 1-2 minutes.
  • Plate in a pasta bowl, garnish with shaved vegan Parmesan cheese.

Notes

  • The lobster and shrimp can be diced and some can be left whole for garnish.
  • When adding the seafood it will be 1/3 cup of diced lobster and 1/3 cup of diced shrimp.
  • If sauce is to thick you thin out the sauce with chicken stock or water.
