This citrus-flavored appetizer is sure to please any seafood lover’s taste.

Ingredients

  • 1/2 cup roma tomatoes finely diced (seeded)

  • 1 ea small red onion or shallot finely diced

  • 1 each small sweet pepper (red, orange, yellow) finely diced

  • 3 tbsp light olive or vegetable oil

  • 3 each lime juiced (for fresh lime juice)

  • 1 each lime grated for lime zest

  • 1 1/2 tsp salt

  • 1 1/2 tbsp cilantro

  • 1 lb diced shrimp, fish or crab (lump or jumbo lump)

  • 2 each red thai chili pepper or jalapeno finely diced

Directions

  • Mix all the ingredients; except the cilantro.
  • Add the seafood to the mixture and place it in the refrigerator to marinate for at least an hour.
  • When ready to serve add the cilantro, mix and serve.

Notes

  • When mixing the crab be gentle not to break the meat too much.
