Ingredients
1 cup peeled cored small diced pineapple
3/4 cup small diced peeled pitted mango
2/3 cup small diced red bell pepper
1/2 cup seeded and small diced tomato
1/3 cup seeded and small diced english cucumber
1/3 cup small diced red onion
3 tbsp minced cilantro
2 tbsp minced mint
2 tbsp small diced jalapeño
2 tbsp lime juice from fresh limes
6 each 6-ounce Sea bass Fillets
TT salt and pepper
As needed olive oil (to coat the bottom of the pan)
Directions
- Combine the first 10 ingredients in a medium bowl; toss to blend. Season salsa with salt and chill to blend flavors, for at least 1 hour and up to 4 hours, tossing occasionally.
- Brush fish with oil. Sprinkle salt and pepper to taste. Grill or saute until opaque in the center about 5 minutes per side transfer topped with salsa & server.
