Grilled seabass with tropical salsa is a vibrant and flavorful dish that combines the rich, delicate taste of seabass with the refreshing sweetness of tropical fruits. The seabass is typically seasoned with a blend of herbs, spices, and a touch of citrus before being grilled until it has a crisp, golden-brown exterior and tender, flaky interior.

Ingredients

  • 1 cup peeled cored small diced pineapple 

  • 3/4 cup small diced peeled pitted mango

  • 2/3 cup small diced red bell pepper 

  • 1/2 cup seeded and small diced tomato 

  • 1/3 cup seeded and small diced english cucumber

  • 1/3 cup small diced red onion

  • 3 tbsp minced cilantro 

  • 2 tbsp minced mint

  • 2 tbsp small diced jalapeño 

  • 2 tbsp lime juice from fresh limes

  • 6 each 6-ounce Sea bass Fillets

  • TT salt and pepper

  • As needed olive oil (to coat the bottom of the pan)

Directions

  • Combine the first 10 ingredients in a medium bowl; toss to blend.  Season salsa with salt and chill to blend flavors, for at least 1 hour and up to 4 hours, tossing occasionally.
  • Brush fish with oil. Sprinkle salt and pepper to taste. Grill or saute until opaque in the center about 5 minutes per side transfer topped with salsa & server.
