Jerk chicken is a spicy, flavorful Jamaican dish made by marinating chicken in a blend of seasonings known as jerk seasoning. This seasoning typically includes allspice, Scotch bonnet peppers, thyme, garlic, ginger, cinnamon, cloves, and nutmeg, along with salt, pepper, and sometimes soy sauce. The marinated chicken is then grilled or smoked, resulting in a smoky, spicy, and aromatic dish. Jerk chicken is a cornerstone of Jamaican cuisine and is often served with rice and peas, plantains, or festivals (a type of fried dough).


Ingredients

  • 9 each green onions, chopped

  • 1 1/2 each onion diced

  • scotch, habanero or jalapeno pepper, seeded and minced

  • 1 cup cup soy sauce

  • 1 oz distilled white vinegar

  • 4 oz vegetable oil

  • 1 oz brown sugar

  • 2 tsp minced garlic

  • 1 tbsp chopped fresh thyme

  • 1/2 tsp ground cloves

  • 1/2 tsp ground nutmeg

  • 1/2 tsp all spice

  • 1/4 tsp cinnamon

  • 1/4 tsp smoked paprika

  • 2 lb chicken (mixture of wings, legs, thighs, and breasts or what ever parts you like)

Directions

  • In a food processor or blender. combine the green onions, onion, jalapeno pepper, soy sauce, vinegar, vegetable oil, brown sugar, thyme, cloves, nutmeg, and allspice. Mix for about 15 seconds.
  • Place the chicken in a medium bowl, and coat it with the marinade. Refrigerate for 4 to 5 hours
  • Preheat the grill or oven to high heat.
  • Lightly oil grill grate. Cook chicken on the prepared grill for 6 to 8 minutes, or in the oven at 400 degrees until juices run clear and 165 degrees is achieved.
  • Serve immediately with a side of rice and peas.

Notes

  • You can also use the Jerk wings seasoning mixture for a dry rub. (see recipe in accompaniments)
