Jerk Wings with Whiskey Glaze

minutesThese spicy wings are sure to please any crowd and can be paired with your favorite sauce to cool the heat.
Ingredients
For Sauce
2 Cups Whiskey or Brandy
1 tbsp sriracha
1/8 tsp red pepper flakes
3/4 cups brown sugar
1/8 tsp salt
2 tbsp butter
For Wings
vegetable oil (if frying) and some to make paste (2 oz for paste optional)
2 tbsp ground coriander
2 tbsp ground ginger
2 tbsp light brown sugar
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp kosher salt,
1 each habanero, scotch bonnet, or red chili pepper (if you can find the powder or these peppers it will work better)
2 tsp ground black pepper
2 tsp dried thyme
1 tsp ground cinnamon
1 tsp ground allspice
1 tsp ground cloves
3 lb wings split at the joints and tips removed or (leave whole)
1 tbsp chopped cilantro for garnish
Directions
- Depending on which method of cooking you are using:
1. Frying: preheat the oil to 350 degrees. Cook for 8 to 10 minutes (use only dry spices)
2. Oven: preheat oven to 400 degrees. Cook for 35 to 40 minutes
3. Air fryer: preheat the air fryer to 400 degrees. Cook for 20 to 30 min. - For wings paste
Combine the coriander, ginger, sugar, onion and garlic powders, salt, habanero pepper, black pepper, thyme, cinnamon, allspice, cloves, and 1 tbsp of oil in a blender or food processor until a paste is formed. Season the wings with salt and pepper and toss them in the jerk paste. Let marinate for least an hour before cooking. - For the Glaze:
Heat the whisky, sriracha, red pepper flakes, brown sugar, and salt in a medium saucepan. Bring to a boil over high heat and cook until reduced by half. Remove from the heat. and then add butter. - Cook wings until the proper temperature of 165. Once the appropriate temperature is achieved
Add the whisky glaze and chopped cilantro and toss to coal each wing. - Wings can be paired with a Chimichurri Sauce.
